WordPress powers a huge share of the web, and it never stands still. The core platform, along with every plugin and theme your site relies on, is updated constantly: new features, compatibility fixes, and, most importantly, patches for security holes as they are found. A typical business site runs a dozen or more plugins, each on its own release schedule.
Leave all of that alone and your site quietly drifts out of date. Plugins stop working well together, features start to misbehave, and the gap between what your site is running and what it should be running grows wider every month.
